Not only is spiralizing fruit and veg quick and easy to do, but it allows you to slip more vegetables into your diet! This recipe is really versatile because you can spiralize any vegetable, so this recipe is just to get the creative juices flowing! Serves 2-4.
Ingredients:
- 2 courgettes
- 2 carrots
- 1 sweet potato
- 1 aubergine
- 1 pepper
- 1 garlic clove
- 1 onion
- paprika seasoning
- pesto
Method:
1) Spiralize (or use a peeler) to make spaghetti-like strands out of your chosen veggies. Chop up some other veg, such as sweet potato, red peppers or aubergine.
2) Stir fry all these veggies in some oil, paprika seasoning, onion and garlic until cooked through. Season to taste.
3) Add toppings of your choice, such as sweetcorn and pine nuts, along with a big spoon of pesto to finish!
