Tomato and Cheese Ciabatta

Want to upgrade your regular tomato and cheese sandwich? Try out these deliciously healthy tomato and cheese ciabattas-super easy to make and filled with hearty goodness to keep you going through the day!

Ingredients:

  • Ciabbata

  • 2 whole tomatoes

  • Batch of cheddar cheese (or equivalent)

  • Garlic powder

  • Butter (or equivalent)

  • Sea salt

  • Baby spinach

  • Pepper

Recipe:

  1. Cut one whole ciabatta into two halves (we bought reduced to clear in-store ciabattas that would have been thrown away, but if you'd like to make the ciabatta yourself we suggest this vegan recipe here https://veggiesociety.com/easy-ciabatta-bread-recipe/ !

  2. Spread butter (or equivalent), garlic powder and sea salt evenly across the bread.

  3. Cut two tomatoes into halves, remove the skin leaving just the flesh and using a spoon squash in a bowl until the tomatoes have reached a thick, semi-souplike consistency. If you don't have any whole tomatoes, canned ones will also work.

  4. Apply the tomatoes evenly using the spoon across the two ciabatta halves, and then sprinkle a handful of cheddar cheese (or whatever alternative you desire)

  5. Place for 10 minutes in the oven at 220 degrees Celsius (or as long as it takes for the cheese to melt!)

  6. Once out of the oven, add a few leaves of baby spinach on top and sprinkle a bit of pepper on top.

  7. Eat by itself for a lighter meal, or add chips on the side to enjoy alongside it...we also enjoyed it with one of the apple juices from The Ugly Fruit Group Stall from last Sunday!
