Wilted Spinach and Tomato Pasta

A simple & easy dish with huge amounts of natural flavour, the perfect use for your wilted spinach!

Ingredients (for 2):

• 225g Pasta

• 450g Cherry Tomatoes

• 75g Spinach/Rocket

• 3 tbsp Olive Oil

• 2 garlic cloves peeled and chopped

• 1 tbsp Balsamic Vinegar

• Salt and Pepper

• (Parmesan to serve)



1. Put pasta on to cook

2. Wash and dry leaves if needed

3. Heat oil in pan and add garlic. Cook until golden

4. Add tomatoes and cook briefly (5 mins)

5. Add balsamic vinegar and let it evaporate

6. Add rocket/spinach and stir in until just wilted (approx. 3 minutes)

7. Season

8. Serve with pasta (and cheese if you wish)
